Orange and Blueberry Squares made with Truvia For Baking Caster Sweetener

55g unsalted butter, softened
110g Oil
2 Medium eggs
110g Plain yoghurt
The zest and juice of 1 small orange
240g Flour
2 tsp Baking powder
100g Blueberries
Directions
- 1.
Preheat the oven to 180°C.
- 2.
Grease a square baking tray.
- 3.
Cream the butter and Truvia For Baking Caster Sweetener together with a hand-held mixer. Once thoroughly mixed, add in the oil, eggs and yogurt. Beat well until smooth.
- 4.
In a separate bowl, add the flour, baking powder and orange zest.
- 5.
Add the dry mixture to the wet mixture and beat well until smooth.
- 6.
Add the orange juice and blueberries and mix thoroughly once more. Pour the batter into the prepared tray.
- 7.
Bake for 20 minutes.
- 8.
Let the tin cool for 5 minutes before removing and leaving to cool completely on a wire rack.
- 9.
Cut into squares and enjoy.
