Malva Pudding made with Truvia For Baking Caster Sweetener

375ml Milk
30ml Butter or Margarine
60g Butter or Margarine, softened
1 Tbsp Smooth apricot jam
1 Tbsp White vinegar
375g Cake flour
2 tsp Baking powder
1 tsp Bicarbonate of soda
2 Eggs
Pinch of salt
SAUCE
250ml Evaporated milk
60g Butter or Margarine
1 tsp Vanilla essence
Directions
PUDDING
- 1.
Preheat oven to 180°C.

Add milk, 30 ml butter or margarine and jam to a small, heavy-based saucepan. Stir over a low heat until butter and jam have melted. Remove from heat and add vinegar.

Cream butter and Truvia for Baking Caster together. Add in the eggs, one at a time, and beat well after each addition until light and creamy.
- 4.
Sift the flour, baking powder, bicarbonate of soda and salt together. Add alternately with milk mixture, and egg mixture. Pour into a large, greased ovenproof dish with a 1 liter capacity or individual dishes and bake for 45 - 60 minutes.
SAUCE
- 5.
Combine milk, sugar and butter in a small, heavy based saucepan. Bring to a boil and simmer for about 3 minutes. Remove from heat and add vanilla essence.
- 6.
Remove pudding from the oven, prick the top of the sponge, multiple times with a toothpick and pour sauce over. Serve immediately white hot!
