Festive Salad sweetened with Truvia For Baking Brown Sweetener, Truvia For Baking Caster Sweetener and Truvia Low-Kilojoule Spoonable Jar Sweetener

Ingredients

  • 2 - 4 Red onions, peeled and sliced into thin wedges

  • 3 Pears or figs, sliced into thin wedges

  • Fresh rosemary

  • 2 Tbsp Balsamic vinegar

  • 4 Tbsp Olive oil

  • 1-2 tsp Truvia For Baking Brown Sweetener

  • Fresh cherries

  • 75g Walnuts

  • 1 Tbsp Truvia For Baking Caster Sweetener

  • Juice of ½ a lemon

  • 1 tsp Truvia Low-Kilojoule Spoonable Jar Sweetener

  • Salad leaves, baby spinach, rocket

  • Cucumber, peels into curls

  • 120g Blue cheese

  • Salt and pepper

Directions

  • 1.

    Preheat the oven to 200°C.

  • 2.

    Scatter the onions, pears/figs in a large tray and season generously with salt and pepper.

  • 3.

    Coat with vinegar and olive oil before generously sprinkling with rosemary and Truvia For Baking Brown Sweetener.

  • 4.

    Roast for 10 minutes or until soft and caramelised.

  • 5.

    Put the walnuts in a small baking tray and sprinkle with Truvia For Baking Caster Sweetener and roast for 5 minutes in the same oven until slightly darker in colour. Remove from the oven and allow to cool.

  • 6.

    Pour any juices from the roasting tray into a small bowl or cup, and whisk in 2- 3 tablespoons of oil and a squeeze of lemon juice and Truvia Low-Kilojoule Spoonable Jar Sweetener to taste.

  • 7.

    Wash the salad leaves, baby spinach and rocket then pat dry. Arrange them on a large plate with the cucumber peels and then top with the roasted onions and pears/figs. Top with the fresh cherries and the walnuts and the dressing and serve.
