Cardamom and Orange Cake made with Truvia For Baking Caster Sweetener and Truvia For Baking Icing Sweetener

The most refreshingly light cake, bursting with the fresh flavours of cardamom and orange, sweetened to perfection with Truvia For Baking Caster Sweetener and Truvia For Baking Icing Sweetener.

Ingredients

CAKE

  • 1 Large orange

  • 1 Tbsp Unsalted butter (for greasing)

  • 100g Self-raising flour

  • 100g Ground Almonds

  • 1 tsp Baking powder

  • 3 tsp Ground Cardamom

  • 4 Eggs

  • 2 cups Truvia For Baking Caster Sweetener

  • 1.

    Preheat the oven to 180°C. Lightly grease a 21cm round, loose-bottomed cake tin.

    Place the orange in a pan and cover with cold water. Bring to the boil before leaving to simmer gently for 30 minutes until the orange is soft. Put the orange into a bowl of cold water and leave to cool.

    Roughly chop the whole orange and discard any pips then place the orange in a food processor and blend until smooth.

  • 4.

    Sieve the flour, ground almonds, baking powder and cardamon into a bowl. In a separate bowl whisk together the Truvia for Baking Caster Sweetener and eggs until thick and creamy.

    Using a spatula, gently fold the flour mixture and pureed orange into the sugar and eggs

  • 6.

    Pour the mixture into the prepared tin then bake in the preheated oven for 30-35 minutes, until the sponge is golden and firm to touch. Allow to cool slightly in the tin before turning out onto a wire rack to cool completely.

ICING
  • 7.

    Sift the Truvia For Baking Icing Sweetener into a bowl and add enough orange juice to make a thick icing. Drizzle over the cake and sprinkle over the orange zest and toasted flaked almonds.
